Broccoli Pesto

This is a great recipe if you have leftover broccoli!

4-5 florets of pre-cooked broccoli
1-2 garlic cloves
1 Tbsp nutritional yeast
1 Tbsp pine nuts
1 Tbsp extra virgin olive oil
Juice of 1/2 lime
2 Tbsp water
Salt & pepper

Blitz everything with a stick blender; alternatively use a food processor or blender.

We had ours stirred through hot pasta. It would probably also be really good with cold pasta as a salad.

      I’m in the UK. You can order it online, try searching for Engevita, it’s really tasty! Or you can sometimes find it in an independent health food store (if they don’t have it in stock maybe you could ask them to order it in for you). Holland & Barrett don’t stock it unfortunately.
