This evening my daughter made us this lovely, delicious spaghetti dish. It was quick and easy to make, and really fresh too.
Chop a few basil leaves, add some extra virgin olive oil, salt, pepper and a shake of garlic granules. Leave to stand while you cook the spaghetti.
Chop some tomatoes and cucumber into small pieces. Cut some cress.
Once the pasta is cooked and drained add the basil oil mix to the saucepan and combine. Serve the spaghetti on a plate, scatter pine nuts over the top along with the tomatoes, cucumber and cress. If you like you can also sprinkle some nutritional yeast over the top.
