Pecan Biscuits


These pecan biscuits are very quick and easy to make, and also very tasty.

2 cups pecan nuts
5 Tbsp water
1/4 cup agave nectar
3 Tbsp lemon juice
1 tsp vanilla extract
Pinch of salt

Makes about 20 biscuits

Food process all ingredients apart from the pecan nuts. Once combined add the pecan nuts and process until everything is well chopped and mixed. Take a spoonful at a time and drop onto baking paper on a baking tray. Flatten and shape with the back of a spoon.

Bake in the oven for about 15-20 minutes at 180C. Keep an eye on them, they are ready when the edges of the biscuits start to darken. Once out of the oven leave them to cool on the baking tray. Once cool slip a palette knife under each and place on a rack to crisp up a little. They will have a little bit of softness in the middle.
