Half a red cabbage, shredded
1 green (Granny Smith) apple, peeled and chopped
1 yellow pepper, chopped
A handful of raisins
A handful of natural unsalted peanuts
1 clove of garlic, smashed
3 Tbsp of vegan mayonnaise
Stir garlic and mayonnaise together before mixing into the coleslaw vegetables.
On a side note, I’ve tried all sorts of vegan mayonnaises and disliked most of them until I ate this one on a spicy beanburger at a music festival last weekend – loved it! It’s from Plamil and you can find it fairly easily – this jar came from Holland & Barrett.
