We eat quite a lot of stir fries, what with me being vegan! So this is the sauce I created to go with our vegetables tonight.
Stir fry veg (whatever your favourites are):
Marinated cubed tofu
Peanut Stir Fry Sauce
2 Tbsp crunchy peanut butter
1 Tbsp low salt soy sauce
1 Tbsp lemon juice
1 Tbsp sweet chilli sauce
Whisk all the ingredients together until well blended. Pour the sauce over the vegetables once they’ve been stir fried in the wok. Toss to coat well, and heat through gently for a minute or two. Serve straightaway. We had ours with couscous.
