Do you do this – buy celery for a recipe, use two stalks and then find a bag of celery sticks sitting in the bottom of the fridge a week later?!
Here is a very simple menu solution to the problem:
As many stalks of celery as you’d like to use (you could always freeze the leftover soup), chopped
1 garlic clove, chopped
1 onion, chopped
1 vegan stock cube dissolved in hot water
Sauté the onions and garlic in a little water until softened. Add celery and stock/water to cover. Simmer until all the vegetables are cooked. Food process/blend the soup and add black pepper to taste.
