Blueberry Muffins

I’ve been baking again with another Happy Herbivore recipe from the www.happyherbivore.com blog!

This is the recipe.

They were delicious! The only alteration I may make next time is to leave out the salt.

    They look really good, and I love the sound of so many classic US muffins, but one of the things that puts me off a lot of vegan American muffins is the applesauce or pureed pumpkin a lot of them seem to need. I guess it’s easy to buy that stuff in the States? Do you buy it in, or make your own? I’m always wary of getting in applesauce for “one cup” type recipes in particular, as I might not get through the rest before it goes iffy! One grated apple or a couple of mashed bananas I’m more than happy with, it’s the processed products that confuses me!

      Hi. No problem about the applesauce, you can buy value applesauce for 74p and one cup for this recipe was one jar, so no waste! Funnily enough I’m the exact opposite of you. If recipe includes mashed banana I tend not to make it, as I find banana in baked goods makes the end product ‘tough’ and chewy!!! Why not try this recipe, I think you’ll be surprised by the results. You could make your own purée instead of buying!
