If you’re looking for something vegan and easy, along with filling and satisfying, this is for you! All you need is a few wraps and some leftovers.
Our freezer has been filling up with tub after tub of leftover something or other. It’s often very difficult to know what’s in these containers so it’s a bit like a roulette game! The best things to use to fill the wraps are beany type mixes and veggies like sweet potato – you want the mix to be as dry as possible.
I unfroze everything in a large microwave bowl. Sprinkle on some powdered bouillon, chilli powder, garlic granules and some lemon juice. Spread out your wraps and share out the mix. Add some nutritional yeast. Wrap into a square (wrap both sides over each other, then tuck the ends over). You can put some nooch on top if you fancy it.
Place wraps on an oven tray and bake in the oven for about 15-20 minutes at 180C.
