Slow Cooker Meal (Vegan)

Hi all, hope you’re all enjoying your weekends, or if you’re reading this after the weekend, hope it was a good one!

Saturday turned into a hotpot sort of day – the weather was miserable and it was cold. We needed to go food shopping and pop into town for other things too, so out came the slow cooker. Before I’d even got dressed I’d filled it with all the leftover vegetables and cleared out the fridge ready for the fresh lot!

There was a quarter of a very large onion, garlic, fresh ginger, a few handfuls of kale, some carrots, to which I added a tin of chopped tomatoes and water to cover. I set it to high and left it for the day!

At dinner time I added a tin of drained butter beans and blended about half of the hotpot mix to thicken up the soup. The only flavouring I added was some sriracha; it was really tasty and substantial. We ate it with some salad wraps.

There’s no photo of the finished soup I’m afraid – it just looked too brown (you probably know what I mean!!!).
