Vegan Pesto


If you want a recipe for vegan pesto you can’t do better than try this one from the gorgeous blog An Ode to Mung Beans:

The pic above is my version of this. I made a smaller amount:

Handful of fresh basil leaves
2 garlic cloves
Handful toasted pine nuts
Juice of half a lemon
Drizzle of extra virgin olive oil
Freshly ground salt and pepper

Grind all the above in your pestle and mortar. Add to the cooked pasta of your choice. I sprinkled some nutritional yeast on top of mine – it was so good!
