Nut Roast (No. 2) Vegan + Oil Free


I’ve adjusted my basic nut roast recipe so as to use the ingredients available:

250g almonds
150g wholemeal breadcrumbs
1/2 tsp dried basil
1 tsp dried thyme
1/2 tsp garlic granules
1 small red pepper
1 small green pepper
Black pepper
250ml hot water
1 dessertspoon yeast extract
1/2-1 dessertspoon soy sauce
1 dessertspoon tomato purée

Chop the nuts in a food processor, then tip into a large mixing bowl. Next put your bread into the food processor and process until you have breadcrumbs, add to the bowl. Next add the rest of the dry ingredients, plus the chopped fresh peppers and give it all a good mix.

Measure out the hot water in a jug and add the soy sauce, tomato purée and yeast extract. Stir until well dissolved.

Tip the liquid into the bowl of dry ingredients and give it all a thoroughly good mix. Line or grease your pan and add the mix.

Bake in a fairly hot oven, 180-190C, for about 45-60 minutes, depending on how ‘fierce’ your cooker is!
