Chickpea Burgers or Patties

This dish is perfect for when you have any leftover beans or chickpeas – it’s so easy, a very simple straightforward recipe!

– leftover beans (I had a couple of cups of cooked chickpeas in the fridge)

– I used a tagine paste I’d found in the supermarket, it had a bit of spiciness to it (about 1 Tbsp). But if you don’t have that, you could use something like a vegan pesto, or tomato paste and chilli powder.

– a little water to bind everything (I used a couple of tablespoons)

Put your beans/chickpeas and tagine paste into a food processor and combine until it is pulped. Drizzle water into the mix while it is processing until it starts to clump together. Turn off your food processor.

Grab big handfuls of the bean mix and press and shape into a ball in your hand. Place the ball onto a baking paper sheet on a baking tray. Flatten with your hand and tidy up the edges.

Bake in the oven for about 20-30 minutes at 200C.

I had leftovers and ate one burger cold between two pieces of homemade wholemeal bread with a big dollop of ketchup for today’s lunch – scrumptious!

      Thanks, great idea to freeze them, could then make up a big batch! My cooking tends to be quite unplanned a lot of the time though! :)
