I’ve been away for three weeks with pretty limited mobile internet access so it feels weird to come back to normality and sit here writing a blog post!
This post is as much about the salad (which was great) but also about easing back into life – couldn’t have done it on Monday – felt in between two worlds!
This chickpea salad just makes me think of summer. I love the fact that it contains raw onion, and leaves you knowing you’ve eaten it!
You will need:
– A couple of cups of cooked chickpeas
– 1 red onion, plus cucumber, carrot, tomato, green pepper, all chopped into small pieces
– French dressing made with extra virgin olive oil, apple cider vinegar, Dijon mustard, salt and pepper
Put everything into your favourite big salad bowl and toss in the dressing. Leave to stand for about half an hour to let the flavours combine.
