Chilli Sauce for Bean Stew or Hotpot

As you can see from my previous post on making a mayonnaise sauce, I’ve been exploring the use of sauces which can be used in different ways and with different ingredients.

Today’s sauce is one which I used with a bean hotpot (red kidney beans) but which could be used with whatever bean mix you fancied using – it really is multi-purpose!

Ingredients:

2 Tbsp rapeseed oil
1 large onion
3 cloves garlic
1 large red pepper
1 tsp chilli powder
1 tsp paprika
1 tsp cumin
1 tin tomato passata
2 Tbsp chilli ketchup
2 tsp unsweetened cocoa powder
1 vegetable stock cube
1 tsp sugar
Salt

Heat the oil in a large pan and cook the chopped onion until soft. Add the garlic and peppers and cook through. Next add the spices and cook for 1 minute. Stir in all the remaining ingredients, along with a little water if you think it needs it. Simmer for about 20 minutes.

Your sauce is then ready. I added the cooked red kidney beans and let everything heat through and absorb the flavours. Adjust seasoning to your taste.
