Spicy Beanburgers + Sweet Potato Fries (Oil-Free)

I felt it was time to experiment with some oil-free cooking, so this is a recipe for homemade beanburgers with sweet potato fries.

You will need:

Pre-cooked red kidney beans (plenty as this is the main ingredient!)
Onion
Garlic
1 stock cube (crumbled)
Herbes de Provence
Dried dill
Chilli powder
Tomato purée

Sweet potatoes

Food processor

Once you’ve soaked and cooked your kidney beans you are all ready to go. I haven’t added any quantities in the list above as it depends how many people you want to cook for. We were two and we had a bowlful of beans. The same goes with the herbs and spices. Just add whatever you fancy/have in the cupboard.

Chop your onions and garlic fairly small in the food processor. Add your kidney beans along with all the flavourings. Process until it’s turned into a firm paste. Keep scraping down the sides and processing.

Tip the mixture into a bowl and refrigerate for about 30 minutes, it will firm up a bit in the fridge.

In the meantime, peel and cut the sweet potatoes into chip/fries size pieces.

Both the beanburgers and the sweet potato fries will need to go in the oven on trays lined with baking paper. Also heat your oven to 200C or 400F.

Using a couple of spoons, place a large spoonful of the beanburger mix on the tray and shape into a round, flattening the top with the back of the spoon. Repeat until you’ve used up all the mix.

Place all the sweet potato fries on a separate tray ready for the oven.

Put both trays in the oven and cook for about 35-45 minutes. Turn the burgers and fries over half way through the cooking time.

  2. Nice meal:) I tend to put some oats in with my beanburgers to help them firm up, but puting them in the fridge sounds good too. I like the idea of baking paper and no oil- will definitely start using that method!

      Definitely worth trying with the baking paper, I was really surprised with how good the beanburgers were but also how well they held together!
