Raw Brownies

I halved the quantities as there were only two of us and it looked and sounded very rich. I halved the weights of the dates and walnuts, but forgot to halve the cocoa powder amounts, Oops! As it turned out it didn’t matter at all, we just had very chocolatey brownies. So, the measurements are how I made it, rather than the original recipe.

200g chopped dates
200g walnut pieces
50g cocoa powder
Date soaking water (keep)

Soak your dates covered in water for 20 minutes. Drain and save the water. Put the walnuts in your food processor and work until they are well chopped. Add the dates and cocoa powder and process these too, adding a little of the soaking water until it forms a good solid paste, or is well combined.

Tip mixture into a low glass dish and press down with the back of a spoon. Refrigerate for at least half an hour or maybe longer. It will become firmer in the fridge.

Remove from the fridge when you’re ready to eat it, and cut into slices.

      Oh yes definitely, you could keep them for quite a long time! We found one portion of this was enough at the end of a meal as rich, so they did last :)
