Prepare your couscous according to the instructions on the packet. Leave to cool.
Chop up some red onion into very small pieces and add to the couscous. Quarter some cherry tomatoes. Cut up some fresh parsley and add with the tomatoes to the couscous salad.
Pour the juice of half a lemon over the salad along with freshly grinded black pepper. Give it all a good mix.
Refrigerate. The flavours will blend nicely.
