Cashew Cheese

Day 3 cashew cheese was definitely tastier than day 1. The longer it was in the fridge, the better it became. I used it for my packed lunches this week.

Just a suggestion, maybe less salt and more lemon! You could also add garlic or onion powder, or even some spices.

    Looks good! I keep meaning to make a vegan soft ‘cheese’ with sunflower seeds as I have 3 kg of them at the moment! Nice organic ones too. Not sure if they’d be as creamy as cashews though. Still worth a try IF I can remember to soak the bliddy things, which is what I keep forgetting to do! I reckon parsley, or even better, chives would be nice as a flavour addition.

      Totally agree with you on adding herbs and chives! If you soak the sunflower seeds for a good 24 hours that should work really well :) Will you let me know if you make it, I’m always looking for new things to put in my sandwiches?

  2. Looks great and here if you buy it from the vegan store it’s sooooo expensive out $15 £7.50
    Making it yourself is better too because its great to experiment with the different tastes. I will try yours too looks great… Ps have you been to the vegan cafe the loving hut ? Check my blog out maybe there is end near you (sorry you may know it already) just thought I’d mention it to you ;) x

      Great recipe! I’m hoping to try Loving Hut in London at the end of May. Can’t wait to walk in and just pick anything I fancy off the menu! :) Enjoy your weekend.

      1. Hi enjoy !! That’s the beauty of it and all vegan places. It’s oblivious but for us we are like a child in the candy store ;). One of my friends kids is vegan he is 4 years old. When he went to the loving hut he was looking at the vegan ice cream and was so happy he could eat anything there. He said to his Mum ” mum this is the happiest day of my life” that made us happy for him.
