This is a really rich gooey chocolate cake!
You will need:
1 1/4 cups plain white flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp apple cider vinegar
1/2 cup sugar
4 tbsp vegan margarine
2 tbsp rice milk
2 tbsp unsweetened cocoa powder
2 tsp vanilla extract
Sift all the dry ingredients for the cake into a large bowl and mix together well. Pour all the wet ingredients into a jug and give a good stir. Add the wet ingredients to the dry mix and combine well until it looks like a blended batter.
If you are using a cake tin, please make sure you line the bottom with some greaseproof paper so there are no sticking problems once the cake is cooked. Or, use your usual cake method to prevent sticking.
Pour the cake mix into your tin and bake in the oven for approximately 40-45 minutes at 180C. It is cooked when a knife comes out clean and the top of the sponge feels springy.
Let the cake cool completely before trying to ice the cake.
To make the icing:
Combine all ingredients in a saucepan and heat until they all melt. Simmer for a couple of minutes stirring all the time. Remove from the heat and stir for a couple more minutes. Wait 5 minutes until it has cooled a little and then pour over your sponge cake.
