Flapjacks

We had a yearning for something sweet and biscuity or cake-like, so this fitted the bill perfectly! If I’m honest, it was a little over-sweet, so next time I’ll make it with a little less sugar. It’s such a simple straightforward recipe, you can’t possibly go wrong!

170g/6oz Vitalite/vegan margarine
170g/6oz caster sugar
225g/8oz porridge oats

Melt the margarine either in a bowl in the microwave or in a saucepan on the cooker. Remove from heat and mix in the sugar and oats. Stir until really well combined.

Line a small to medium sized baking tray with greaseproof paper. Tip the mixture in and distribute evenly with a wooden spoon.

Bake in the oven for 25 minutes at 180C. Remove from the oven when golden brown. Cut into pieces straightaway and leave to cool in the tin. Once cool store in an airtight container to keep fresh.
