Chana Masala

This dish makes a great change from a straightforward curry. It is light and has a subtle blend of flavours – we were very pleased with the outcome and enjoyed the meal!


1 1/2 cups precooked chickpeas
1/2 cup water
1/2 chopped onion
3 garlic cloves chopped
3 tablespoons olive oil
Juice from 1 lemon
1/2 teaspoon curry powder
1/2 teaspoon coriander powder
1/2 teaspoon cumin
1/2 teaspoon garam masala
2 handfuls of spinach

Cook the onion and garlic in the olive oil until softened. Add the spices, lemon juice, chickpeas and water. Cook for about 15 minutes.

Add the spinach and cook until wilted. I had some spring greens that needed eating so I added those instead of the spinach.

Serve over brown rice and enjoy!
