Fruit and Nut Cake

150g plain white flour
150g plain wholemeal flour
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
Pinch of salt
300ml medium strong tea
85g vegan margarine
85g sugar
85g dried fruit + nuts (I used raisins + walnuts)

Weigh out and put all dry ingredients in a large mixing bowl. Heat all remaining ingredients in a saucepan or in a jug in the microwave until it is simmering and the sugar has dissolved. Let it cool a little.

Add the wet ingredients to the dry ingredients in the bowl and give a really good stir.

Tip mixture into tin of your choice and bake in the oven 180C for about 1 to 1 1/4 hours. Once cooked, let it stand in the tin for 5 minutes, then cool on a rack.

      Thanks! I had another slice mid-morning with some coffee and it tasted even better, the walnut flavour came through a bit more!
