What I Ate Wednesday (WIAW)

I thought I would do a What I Ate Wednesday (WIAW) post, as I’ve read quite a few over the last few months and have always enjoyed them. Reading what people have had to eat on one particular day is sometimes quite revealing so I thought it might be fun to try! My only concern was would my diet look healthy?!

So, without further ado, here we go:

I always eat a hearty breakfast! It started with orange juice; fruit and nut muesli with rice milk; two pieces of wholemeal toast with Pure sunflower spread, one with organic crunchy peanut butter, one with agave nectar; a huge (and I mean huge) mug of freshly brewed black coffee! Now I know coffee is not meant to be good for you, but it’s a highlight of breakfast for me!

Mid-morning: decaff coffee

Lunch: Sandwich with homemade mix of roughly blended tinned butter beans, mixed with freshly squeezed lemon juice, paprika, sea salt/cracked pepper, and enough water to blend it; packet of plain salted crisps; apple; two digestives with, wait for it, chocolate spread on them; orange juice and water; decaff coffee.

I discovered this hazelnut and cocoa spread the other day… much to my delight, as I’d been missing chocolate spread! Now this comes with a warning as it is not labelled *Vegan*, however it has no dairy ingredients, so I decided to go with the flow on this one. Here’s a piccie in case you want to try it:

Dinner was a beanpot and brown rice, followed by a kiwi.

Think I need to concentrate on my salad and greens tomorrow!

  1. That’s quite a tasty list for 1 day of vegan eating! Your breakfast is way too much for me. I normally make a similar home-made creal though & I also have the same brand of rice milk. I add a piece or 2 of fresh fruit. I drink herbal tea every morning! It all sounds tasty too! :)

  2. Looks good and breakfast is important.. muesli is a great way to start the day and I sometimes have it for lunch or for breakfast. I eat a lot of fruit too. Its funny people ask me sometimes hey Thomas I bet you stave at breakfast.. what do vegans eat for breakfast which I find odd because most of the breakfasts are vegan :) You eat very healthy and nutritionally :)
