I’ve been really inspired by some of the recipes I’ve read on the blog In Vegetables We Trust and thought I would try out one of the quick bread ones today.

You can find the recipe here. It’s a fantastic recipe and quite unusual!

I should say that I didn’t have all the exact ingredients so made some adjustments. The flour was all plain wholemeal, the coffee was decaff instant, the vinegar was ordinary malt vinegar, and I didn’t have any caraway seeds so used a tablespoon of shelled hemp. Oh and lastly, I used rice milk instead of soy milk. It was a good wholemeal loaf with a great taste! We all really enjoyed it.
