Cauliflower Soup

Aren’t cauliflowers just beautiful at the moment?! They are at their prime and in season, so when our shop was selling them at two for the price of one I grabbed these beauties! We’ve had one head of cauliflower as a side dish vegetable with vegan pie and potatoes – lightly steamed that’s all – perfect!

The second head of cauliflower has gone into our soup. This recipe is enough for 4 people.

You will need:

1 cauliflower
4 potatoes
2 onions
2 garlic cloves
1 vegan stock cube
1 teaspoon cumin
1/2-1 teaspoon ground ginger
1/2-1 teaspoon chilli powder
Approx 1.5 litre water

Chop all the vegetables and place in a large casserole dish. Add the spices/stock cube and plenty of water to cover the vegetables plus a bit extra. Stir and then simmer for a good half hour. Once cooked blend until you reach the desired consistency. All the flavours should be nicely combined. Serve with fresh bread.
