I found a really great way of cooking courgettes yesterday! Take one courgette per person. Remove the end parts. Cut in half and then in half again. Spread the courgette quarters out in a roasting tin or on a baking sheet. Brush with olive oil, sprinkle with garlic powder, a little salt and pepper.
Bake in a hot oven at around 200C for about 20-30 minutes. The courgettes should still be firm, not soft.
I was amazed by how delicious this simple dish was. Baking the courgette meant that it really kept and enhanced its flavour.
