I was either feeling brave, or maybe it was lazy, but I decided to just throw together a chocolate brownie mix without using a recipe! Our store cupboard doesn’t always have the items listed in recipes, so it is usually a case of adapt, adapt and adapt…
The mix turned out really well and was delicious, so it all worked out in the end. The only problem was the lack of measuring and weighing. So, here goes, with an approximation of what the ingredients were! Feel free to alter amounts as you go along.
1 cup cashew nuts
1/2 cup raisins
3 tablespoons flour
2 tablespoons cocoa powder
1 tablespoon sugar
1 teaspoon baking powder
2 tablespoons margarine
Chop the cashew nuts and raisins in a food processor first. Add the flour, cocoa powder, sugar, baking powder and margarine to the mix. Combine everything until it resembles bread crumbs. Add water a little at a time until it starts to clump together.
Tip mixture into a pie/quiche tin with a loose bottom. Spread out evenly and flatten with the back of a spoon. Cook in the oven for about 15-20 minutes at 180C. Cut into portions whilst hot. Leave to cool before removing from tin, it will firm up a little.
