Sweet Potato & Kidney Bean Patties

I thought I’d try out my new burger maker! It was getting to the end of the week’s food shop and what was left was a sweet potato that needed eating!

Sweet Potato & Kidney Bean Patties

Makes 4 large patties

1 can of red kidney beans (drained)
1 medium size sweet potato (cooked)
1 dessertspoon smooth peanut butter
1 dessertspoon golden syrup
2 dessertspoons nutritional yeast (optional)
Lemon juice to taste
Salt
Chilli pepper (sprinkling)
Garlic granules (good shake)
Flour to coat
Olive oil (for frying)

Start by steaming the sweet potato. Add all ingredients to the food processor, and mix until well chopped/blended. Adjust seasoning to taste.

Shape patties using well floured hands, or if you have one, use a burger shaper. This is my new one, and I’m very pleased with it!

Heat some olive oil in a non-stick frying pan. Once the oil is nice and hot, add the well-floured patties to the pan and cook until the patties are well-coloured. It’s best not to turn them until they’re reached that stage, as they will hold together a lot better.

We ate our patties with baked potatoes and a large mixed salad.
