Flour Tortilla Wraps

I asked my daughter ‘what shall we eat tonight?’. Her answer was Fajitas! A quick look in the cupboard confirmed that we had the makings of a beany mixture for the filling; we also had some hummus and a jar of salsa. The only item missing was the very important wraps!

A quick search provided a basic recipe which would do the job:

Flour Tortilla Wraps

(Enough for 6 wraps)

400g plain flour
1 Tablespoon vegan margarine
1 teaspoon baking powder
Large pinch of salt
175ml boiling water

1. Mix flour, baking powder, and salt in bowl. Rub in margarine to resemble texture of polenta. Add water slowly.

2. Knead for a few minutes on a floured surface until smooth and elastic. Lubricate top with oil, put back in bowl and let rest, covered for 10 minutes.

3. Divide into small balls and proceed to roll out into size and thickness you prefer.

4. Cook in dry heavy frying pan until top is slightly bubbly, then turning on opposite side for a minute or two. Keep stacked and warm inside a clean tea towel (keeps them soft, stops them hardening up).
