I made a couscous salad for lunch yesterday – so simple, yet so tasty! Wholegrain couscous, tomato, cucumber, lettuce, sweetcorn. You could add nuts and raisins too!
The dressing was made from extra virgin olive oil with lemon, balsamic vinegar, Dijon mustard, salt and pepper. I added some chopped fresh garlic to the dressing and let it sit for a while so it infused the dressing with a bit of bite!
Mix everything together thoroughly and chill for a little while in the fridge, letting the flavours combine.
