I had my favourite kitchen appliance out again tonight – my electric wok! Perfect for when you want to throw together a quick vegan meal.
Ingredients were courgette, red pepper, mushrooms, tinned butter beans, and a tin of tomatoes in rich tomato sauce. I added ground ginger, chilli and some mushroom ketchup (mushroom ketchup is nothing like tomato ketchup, it’s very liquid). You could use soy sauce instead of the latter.
We had our quick wok meal with couscous.
